Shelving within the walk in is lined with cardboard at the time of inspection. [CA] Discontinue the use of cardboard boxes to line shelves/flooring, use approved equipment made of materials that is easily cleanable, durable, smooth, and nonabsorbent.

Large hole noted in the back of the dry storage where CO2 tanks are being held. [CA] Repair holes in structure and maintain in good repair to prevent pest harborage.

Mold like substance is starting to grow within the interior panel of the ice machine. Dripping into the ice directly. [CA] Clean/sanitize the ice machine per manufactures specifications. [SA] PIC has tossed all ice away and is starting to sanitize the ice machine.

Shelving and fan guards within the walk in have dust build up at the time of inspection. [CA] Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

CO2 tanks are not tied down to a rigid structure at the time of inspection. [CA] All pressurized cylinders shall be securely fastened to a rigid structure.
