    The water temperature on the only handwash sink of the bakery was measured above 120 oF. [CA] Lower the water temperature on the handwash station to 100 oF.

  • K36: Equipment, utensils, linens: Proper storage and use

    Some clean working utensils including the slicer were stored in unclean container/surface and milk crates [CA] All reusable utensils including the ice scoop must be stored on clean surface/container in between use.

    There was excessive water accumulation on the floor area. [CA] Conduct a regular thorough cleaning of the floor below the shelves and keep the floor area neat and dry.

    There was a very low sanitizer concentration on the manual three-compartment ware washing sink. [CA] Whenever sanitizing of utensils/equipment is conducted, the sanitizer concentration maintain in the sanitizing compartment of the manual warewashing sink must be maintained at 200 ppm quaternary ammonia or 100 ppm chlorine, unless otherwise specified by manufacturer of the chemical.

FOLLOW-UP INSPECTION

Follow up for no hot water during limited inspection on 1/21/2026. Measured hot water at all sinks. Bakery Dept. is approved to reopen. PIC provided via email spec sheets for new water heater. Serial #. A352503504 BTUH: 199,900 GAL CAP: 100 Spec. sheets will be reviewed for approval and may require plan check review and approval.

ROUTINE INSPECTION

Limited inspection conducted due to major violation of no hot water. Per PIC, the dept. has not had hot water since the day before and is schedule to have the water heater replaced in the next day or two. Due to no hot water, no active preparation or ware washing can be conducted. Bakery is to cease and desist from any food handling / food preparation until the dept. is re-inspected and written approval is obtained to operate. Once the above is corrected, please reach out to the Jennie Penaloza at 408-918-3471 or the main office at 408-918-3400 to schedule a follow-up inspection to reopen the facility. ***Subsequent follow up inspection after first follow up shall be billed $298/hr during business hours and $645/hrs (minimum of 2 hours) during nonbusiness hours upon availability. *** *** Measured hot water (123F - 138F) at the POLLO Dept. (PR0425839) and the TAQUERIA dept. (PR0376456). These departments can remain open. Discussed with PIC, that Plan Check review and approval will be required if new water heater is a different model/type from the current one.     Milk at coffee self service area measured at 56F. Per employee, milk is placed in container 2 hours and will discard in 2 more hours. No time mark observed for TPHC. [CA] When time only, rather than time and temperature is used as a public health control, PHFs shall be time marked to indicate when item is removed from temperature control, discarded if not consumed or served within 4 hours, and written procedures shall be readily available for review.
