Salsa measured between 50F to 55F. Cooked al pastor maintained on the steam table at the right side preparation measured between 109F to 156F. [CA] PHFs shall be held at 41°F or below or at 135°F or above. Frequently stir hot holding items to maintain hot holding temperatures. [COS] Tray of pico de gallo was relocated into the food preparation refrigerator to immediately cool.
