Major: Chicken wings stored in crates measured between 61-64F. Per food employee, chicken wings were removed from temperature control less than three hours prior. Minor: In the 2 door prep cooler: Goat cheese, feta cheese, and tomato sauce measured between 45-47F. Food items were stacked on top of prep cooler inserts. [CA] Potentially hazardous foods shall be held cold at 41°F or below. Prep cooler inserts shall not be filled past the load line. Discontinue double stacking containers/cheese bags to maintain proper air flow in unit. [SA] All food items were relocated to the walk in cooler for rapid cooling.

1) Gaps in wall around plumbing. (Near water heater) 2) Gaps above back screen door. [CA] Eliminate gaps greater than 1/4" to prevent the entrance and harborage of vermin.

Worn gaskets observed on True 3 door prep cooler door, walk in cooler door, and drawers of True Chef Base. [CA] Replace gaskets and maintain in good condition.

In the walk in cooler, raw shell eggs stored above ready to eat food. [CA] All food shall be separated and protected from cross-contamination. Store all raw meat or other raw products of animal origin below ready-to-eat food items.

*Repeat violation Chicken wings being thawed at room temperature. [CA] Frozen potentially hazardous food shall only be thawed in one of the following ways: 1) under refrigeration that maintains the food temperature at 41°F or below, 2) completely submerged under potable running water for a period not to exceed two hours at a water temperature of 70°F or below, and with sufficient water velocity to agitate and flush off loose particles into the sink drain, 3) in a microwave oven if immediately followed by immediate preparation, 4) as part of a cooking process.
