    Observed black and brown mold-like substance on inside panel of ice machine. [CA] Thoroughly clean and sanitize ice machine on a regular basis. Chlorine concentration in 3 comp sink measured at 50ppm. No active warewashing being done during time of inspection. [CA] Ensure chlorine concentration for manual warewashing measures at 100ppm. Observed a dead moth and a dead fly on a prep table. [CA] Keep prep areas clean and sanitized at all times.

    Observed potentially hazardous foods that measured in the temperature danger zone located on the stove (boba 88F). Per PIC, the boba finished cooking around 11:30. Boba was not time marked for 4 hours. [CA] PHFs utilizing time as a public health control (TPHC) shall be time marked for 4 hours and discarded within 4 hours from the point in time when food is removed from temperature control. [SA] PIC will discard boba by 3:30pm.
