Chunks of pork in the 2 door upright cooler at the back area measured at 44 degrees Fahrenheit. Observed the chunks of pork to be stacked in such a way there is no air flow around the inner meat. Discontinue stacking pork, Arrange chunks of pork on a sheet pan in a single layer and positioned in a way that allows air flow around the chunks of pork.
