FOUND AN EMPLOYEE’S CUP WITH COFFEE STORED NEXT TO FOOD RELATED ITEMS IN THE KITCHEN. [CA] PROVIDE BEVERAGE CONTAINERS WITH A LID.
ROUTINE INSPECTION
Specialist provided Spanish translation during this inspection.
Prepackaged raw beef is stored on shelf above bread dough inside the walk-in cooler. [CA] All food shall be separated and protected from cross-contamination. Store all raw meat or other raw products of animal origin below ready-to-eat food items. [COS] PIC relocated raw beef below dough.
Flour and debris observed on shelves and counter tops. \ [CA] Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
Flour bins and other food bins do not have a label. [CA] Working containers holding food or food ingredients that are removed from their original packages shall be identified with the common name of the food if not easily recognizable.
Chlorine test strips not available. [CA] Testing equipment and materials shall be provided to adequately measure the applicable sanitization method used during manual or mechanical warewashing. Provide chlorine test paper to measure sanitizer concentration of 100 ppm when ware washing.
