  • K14: Food contact surfaces clean, sanitizedCritical

    Mold like substance is growing in the interior panel of the ice machine and touching ice directly. [CA] Clean/sanitize the ice machine per the manufactures specifications. [SA] PIC has tossed all the ice within the ice machine and sanitizing machine. Additional ice will be brought in from facility next door once the ice machine has been clean/sanitized.

    MAJOR: 1. Milk stored within under counter prep table was measured at 67*F at the time of inspection. [CA] PHFs shall be held at 41°F or below or at 135°F or above. Do not use unit until it gets serviced by contractor. [SA] PHFs were VCD into the dumpster, VCD form provided to PIC. MINOR: 2. PHFs within small prep table unit were measured between 47-49*F at the time of inspection. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [SA] Facility will use TPHC for unit; until it gets serviced by a contractor.

    Food debris noted within the floor of the walk in at the time of inspection. [CA] Regularly clean under cooking equipment to prevent accumulation of debris.

    Hand wash station next to reach in freezers has a soap dispenser that is not operational a the time of inspection. [CA] Provide hand washing cleanser in dispenser at hand wash stations at all times. [SA] Facility has an additional hand wash station that is fully stocked and operational.

  • K33: Nonfood contact surfaces clean

    1. Dust build up noted within the fan guards at the time of inspection. [CA] Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. 2. Silicon within the 3-compartment sink has a mold like substance on it. [CA] Remove old caulking and add fresh silicon.
