Diverter valve on the faucet at the 3 compartment sink is broken. [Corrective Action] Repair or replace the diverter valve.
ROUTINE INSPECTION
Employee sanitized equipment in 3rd compartment sanitizing sink for a few seconds with quaternary ammonia solution. [CA] Manual sanitization shall be accomplished in the final sanitizing rinse by contacting a chlorine solution of 100 PPM concentration for at least 30 seconds or by contacting a quaternary ammonium solution of 200 PPM concentration for at least 60 seconds. [COS] Education provided and employee placed equipment back to sanitizing sink for longer time.
Plastic wrap was used as stopper for 3rd compartment sink. [CA] Plugs/stoppers shall be available to fill up the warewashing sink.
