    Raw shelled eggs maintained above ready-to-eat food items inside the walk-in refrigerator. [CA] All food shall be separated and protected from cross-contamination. Store all raw meat or other raw products of animal origin below ready-to-eat food items. Cases of strawberries maintained on the floor inside the walk-in refrigerator. [CA] Food shall be stored at least 6 inches above the floor to prevent contamination.

    Employees' cellphones observed stored in areas of food preparation and/or around food contact surfaces. [CA] No person shall store clothing or personal effects in any area used for the storage and preparation of food or food contact surfaces.

    Both savory and sweet PHF pastries maintained for customer self-service subjected to time as a public health control (TPHC), per employee and manager are not discarded after four hours, but rather, ice packs maintained below items are changed every four hours. Temperature of pastries measured between 58F to 65F. Time logs are maintained for the purpose of changing out the ice packs. At time of inspection, items have not yet reached the maximum allowed time for TPHC. [CA] PHFs utilizing time as a public health control (TPHC) shall be discarded within 4 hours from the point in time when food is removed from temperature control. * Note: if PHF items are to be maintained at temperature control, items must be maintained at 41F and below, or at 135F and above.
