- K26: Approved thawing methods used; frozen food
SHRIMPS WERE THAWING IN A CONTAINER WITHOUT RUNNING WATER. [CA] Frozen potentially hazardous food shall only be thawed in one of the following ways: 1) under refrigeration that maintains the food temperature at 41°F or below, 2) completely submerged under potable running water for a period not to exceed two hours at a water temperature of 70°F or below, and with sufficient water velocity to agitate and flush off loose particles into the sink drain, 3) in a microwave oven if immediately followed by immediate preparation, 4) as part of a cooking process.

ICE SCOOP IN A BAR AND A SPOON FOR SCOOPING ICE CREAM WAS IN A FREEZER TOUCHING ICE CREAM AND ICE. [CA] Handle to ice scoop shall be stored so that it is not in direct contact with ice. FRONT WALK IN COOLER WITH ALCOHOL HAS CARDBOARD TO LINE SHELVES. [CA] Discontinue the use of cardboard boxes to line shelves/flooring, use approved equipment made of materials that is easily cleanable, durable, smooth, and nonabsorbent.

BAR AREA HAS TWO BOTTLES WITHOUT LABELS. [CA] Chemicals once removed from original container shall be labeled with common name.

HANDWASHING SINK IN THE WAREWASH AREA WAS INACTIVE AND LACK SOAP AND PAPER TOWEL. [CA] Properly wash hands with soap, warm water and dry using single use paper towels as required. [SA] WAREWASH HAND WASHING SINK SHALL BE ACTIVE AND IN USE.

USED WIPING CLOTH WAS LEFT IN SUSHI COUNTER [CA] Wiping towels shall be stored in sanitizing solution of an approved concentration when not in use (100 ppm - chlorine, 200 ppm - quaternary ammonium).

AFTER USE, MOP WAS LEFT ON FLOOR. [CA] After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies.
