    Cheese in under counter reach in fridge measured 53F. Per PIC, they brought the items from the storage room one hour prior when facility opened for service. Ambient air in reach in fridge measured 51F. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [SA] Discontinue use of the reach in fridge to maintain PHF at 41F or below. Can be used to temporarily store items for up to four hours. Items must be time marked and used within four hours or discarded at the end of the four hours. At 2pm, all items currently in reach in fridge must be discarded. Some items were already relocated to the storage reach in fridge.
