    Pizza in upright warming unit was measured between 120-130F and in the hot boxes measured between 110-120F. Per PIC, pizza was delivered at 10:30 am and measured around 160F. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [SA] PIC agreed to use Time as a Public Health Control for pizzas. Lunch service time is from 11:30 am - 1:05 pm. Pizza was time marked using a time log and to be served from 10:30 am -2:30 pm. Any and all remaining pizza to be discarded.

Notes: - Per Veronica, there was a slight issue with rodents on campus during the summer with evidence of intrusion in the small storage/office room of the kitchen. Facility was treated by a pest control service company, exclusionary measures were taken, and contaminated foods were discarded. No evidence of rodents observed today. - Reviewed HACCP Plan. No issues observed.

    1. Second Repeat Violation: Water at the faculty restroom located near the main office measured at a peak of 73°F. [CA] Handwashing facilities equipped with a mixing valve that is not readily adjustable at the faucet, shall provide warm water at least 100°F, but not greater than 108°F. 2. Water at the only handwash sink in the kitchen comes out at 158°F. [CA] Handwashing facilities shall be equipped to provide minimum 100°F water under pressure for a minimum of 15 seconds. Lower maximum hot water temperature to prevent potential scalding and encourage frequent hand washing.

  • K42: Garbage & refuse properly disposed; facilities maintained

    The roll up door for the garbage room was open and several adult cockroaches were observed in the corner of the room that had several items on the floor. The wall with the cockroaches is shared with the kitchen room. [CA] Refuse enclosure not kept clean of debris to prevent buildup of soil and attractants for vermin. Ensure to maintain facility free of animals, pests, and vermin. Cockroaches were eliminated immediately by custodial staff.
