Operator expressed concern about keeping noodles dry when reheating in oven, facility may also reheat on griddle or on stove top as well. [COS] Brisket and chow mien was moved into oven to rapidly reheat to 165F prior to returning to upright warmer. Brisket measured to be 168F after 45 minutes and chow mien measured to be 179F.

The applicant has completed the facility evaluation application process for an Environmental Health Permit. The permit category for this facility is FP11. An invoice for the permit fee in the amount of $1,580.00 will be mailed to the billing address on the application. Payment must be submitted within 10 days of receipt of the invoice. The owner is responsible for contacting our department if an invoice is not received and remit payment within 30 days. The Environmental Health Permit will be effective: 03/01/2026 - 02/28/2027 This report serves as a temporary permit. The following violations are due to major handwashing and food adulteration violations. Upon follow up: Employee observed to be washing and hands after cleaning and prior to handling food. All handwash sinks observed to be fully stocked. No food observed to be adulterated or moldy inside walk in cooler and other refrigeration units. Cans observed to be in good condition. Walk in cooler measured to have: -Cooked rice at 39F -Cooked curry at 39F -Cooked meat at 41F No cooked foods observed on the counter top or on cooling rack. Per operator he will be cooling foods in smaller containers in walk in cooler. Major violations observed to have been corrected. Continue to work on other violations from routine inspection report.
