ROUTINE INSPECTION
Ensure Food Safety Certificate is obtained within 60 days and all other employees within 30 days. Observed macaroni, kalua, gravy sauce and curry sauce cooled in the walk-in cooler. Permit category may be changed to Risk Category 3 and permit fees increase. When asked about cooling methods, employee discussed leaving cooked pork out all night then shredded in the morning and then placed into the walk-in cooler. When cooling, ensure foods are cooled from 135F to 70F within 2 hours then 70F to 41 withing another 4 hours.
