    Hot water for the handwash sink located by the deep fryer was turned off. Per employee, the faucet leaks when the hot water is turned on. [CA] Handwashing facilities shall be equipped to provide minimum 100°F water under pressure for a minimum of 15 seconds. Repair leak and maintain plumbing in good repair.

  • K07: Proper hot and cold holding temperatures

    Raw chicken and raw chicken wings held on ice located above the batter prep table is measured at 45F. A proper ice bath is not prepared as the ice was only in contact with the bottom of the containers. [CA] Potentially hazardous foods when cold holding shall be held at or below 41F. When using an ice bath, the ice or ice water shall also be in contact with the sides of the container to hold food at the proper temperature. [COS] Employee added more ice and water to create an ice bath around the container.
