- K26: Approved thawing methods used; frozen food
Chicken thawing in dripping running water. Water measured to be 73F. [CA] Frozen potentially hazardous food shall only be thawed in one of the following ways: 1) under refrigeration that maintains the food temperature at 41°F or below, 2) completely submerged under potable running water for a period not to exceed two hours at a water temperature of 70°F or below, and with sufficient water velocity to agitate and flush off loose particles into the sink drain, 3) in a microwave oven if immediately followed by immediate preparation, 4) as part of a cooking process. [COS] Cold water was turned up and measured to be 67F.

Compressed gas tanks observed to be unchained. [CA] Chained compress air tanks to rigid structure.
- K36: Equipment, utensils, linens: Proper storage and use
1) Scoop in rice bucket observed to be single use to-go container without handle. [CA] Provide scoops with handles and store such that handles are not in direct contact with food. 2) Ice scoop observed to be stored directly on top of ice machine. [CA] Store ice scoops in an area that is cleaned regularly. Facility may keep ice scoop in designated bucket ontop of ice machine. [COS] Ice scoop was washed.

Spices and flour observed to be stored in open bags. [CA] Keep bulk dry foods inside containers with tight fitting lids to protect from contamination.
