- K48: Plan review
Observed two burner stove installed next to handwash sink without hood. Observed yellow discoloration of walls and ceilings. [CA] All cooking equipment is required to be under a hood. Two burner stove must be removed from facility by 05/20/2025 or plans must be submitted to DEH Plan Check for approval. The installation of a hood is required.
- K23: No rodents, insects, birds, or animals
Observed many small flies in back preparation area. [CA] Food facility shall be kept free of non-disease carrying insects, weevils, ants, gnats, and fruit flies.
- K08: Time as a public health control; procedures & records
Written procedures for TPHC of custard filled pastries are not being followed. Per PIC, they know when the items are removed from the oven and placed out and they discard 3-4 hours after. [CA] Provide written procedures and time marking for PHFs utilizing time as a public health control (TPHC). TPHC forms printed for PIC to complete again.
- K21: Hot and cold water available
Warm water in restroom measured 72F after allowing the water to run. [CA] Handwashing facilities shall be equipped to provide minimum 100°F water under pressure for a minimum of 15 seconds.
- K34: Warewash facilities: installed/maintained; test strips
Quaternary ammonia test strips were not available at time of inspection. [CA] Testing equipment and materials shall be provided to adequately measure the applicable sanitization method used during manual or mechanical warewashing.
