Observed potentially hazardous food that measured in the temperature danger zone located in the food prep cold hold (sliced tomatoes 53F). Per staff, the tomatoes were recently cut and put into the unit. [CA] Ensure PHFs are properly cold held at 41F or below OR hot held at 135F or above. PHFs that measure over 41F must be put into refrigeration such as a reach-in or walk-in cooler to lower the temperature to 41F before placing into a prep unit. [COS] PIC had staff put tomatoes in walk-in cooler.
