    The manager helps prepare food and does not have a food handler card nor FSC. [CA] Each food handler shall maintain a valid food handler card for the duration of his or her employment as food handler. A valid food handler card shall be provided within 30 days of after the date of hire.

    Observed raw prawns above coleslaw in the walkin cooler. [CA] Store all raw meat, seafood, and poultry below all other foods.

    Observed 3 non working refrigerators in the facility. [CA] Remove all of the not working and/or not used equipment.

  • K34: Warewash facilities: installed/maintained; test strips

    No sanitizer test strips available, [CA] Obtain and use the sanitizer test strips. When setting up the dish sink be sure it is set up for wash, rinse, sanitize. The dishes must be first washed with soap, then rinsed with clean water, then put into the 3rd compartment with sanitizer.

    The refrigerators have accumulated food particles. [CA] Thoroughly clean up the equipment. Observed unused equipment and refrigerators in the facility. [CA] Remove the unused equipment from inside the facility.

  • K23: No rodents, insects, birds, or animals

    Observed one dead cockroach on the floor behind the unused cooking equipment. [CA] Take effective measures to eliminate any roaches from inside the facility. [COS] The roach was cleaned up. Pest control company invoice was shown to me by the owner. Continue with the pest control service.

  • K27: Food separated and protected

    Observed the delivery of frozen shrimp in boxes and a box of mushrooms outside and the facility still closed. [CA] The food must be kept inside and not left outside. Be present to receive the food upon delivery and place PHF under proper temperature control. The shrimp were still frozen upon observation.

  • K40: Wiping cloths: properly used, stored

    The used wiping cloths are not placed in sanitizer between each use. [CA] Keep the used towels in sanitizer between each use.
