- K01: Demonstration of knowledge; food safety certification
Food handler cards for staff were unavailable. [CA] Each food handler shall maintain a valid food handler card for the duration of his or her employment as food handler. A valid food handler card shall be provided within 30 days of after the date of hire.
- K38: Adequate ventilation/lighting; designated areas, use
1. There is a grease accumulation on the ceiling tiles and walls near the exhaust hood. [CA] Ensure to have the exhaust hood on at all times when equipment is in use. Ensure the hood is functioning properly. 2. The light bulbs under the exhaust hood are all out of order. [CA] In every room and area in which any food is prepared, manufactured, processed or prepackaged or in which equipment or utensils are cleaned, sufficient natural or artificial lighting shall be provided. Replace the bulbs.
- K07: Proper hot and cold holding temperatures
Third Repeat Violation: At the salad bar, measured macacroni salad, potato salad, cheese, etc between 43-47°F. Per PIC, they set up the salad bar around 30 minutes prior. [CA] PHFs shall be held at 41°F or below or at 135°F or above. Failure to comply may result in further enforcement from this department. [COS] PIC agreed to place items on time control for today. Salad bar is open from 11 am to 2 pm. Notes: Measured the ambient of the area where the inserts go into to be 47°F. Digital readout of the internal thermometer displayed 40°F.
- K35: Equipment, utensils: Approved, in good repair, adequate capacity
The salad bar prep unit is not maintaining PHFs at 41F or below. [CA] Refrigeration must be capable of maintaining PHFs at 41°F or below.
