    Observed employee skip sanitizing step at the 3 compartment sink when washing utensils/equipment. At the ice machine, observed mold like growth/accumulation on the inner panel. [CA] Ensure proper warewashing is conducted where utensils and equipment are washed, rinsed and sanitized using an applicable sanitizer. Ensure ice machine and inner panel are frequently cleaned and sanitized to prevent contamination of food (ice). [SA] Operator placed utensils/equipment in chlorine sanitizer measured at 100 PPM. Operator to clean and sanitize inner panel of the ice machine.

Discontinue use of unapproved equipment to prevent possible harborage of vermin.

    Observed used mixing cups and blenders are cleaned without soap and sanitizer at the front counter, and have not been moved to the back area to properly clean and sanitize every 4 hours. [CA] Ensure equipment used in preparation of potentially hazardous foods are cleaned and sanitized every 4 hours to prevent possible bacterial growth. [COS] Operator moved all mixing cups and blenders to the 3 compartment sink to clean and sanitize.
