Per PIC, fried basil was cooked overnight, fried again in the morning, and kept at ambient temperature for more than 4 hours. [CA] Potentially Hazardous Foods shall be kept at 41F or below or 135F or above. [COS] Curry and fried basil were voluntarily condemned and discarded at the time of inspection. Amended TPHC procedures for fried basil during inspection.

[CA] Provide approved exhaust hood ventilation over all cooking equipment as required to effectively remove cooking odors, smoke, steam, grease, heat, and vapors. The installation and use of new cooking equipment without ventilation requires approval by this department.

FOLLOW-UP INSPECTION

On-site to conduct a follow-up to the routine inspection from 8/18/2025. The following major violations have been corrected: - K06: Adequate handwash facilities. All handwash stations have been fully stocked with soap and single use towels and are accessible. - K07: Proper hot and cold holding temperatures. --- Measured curry in the walk-in cooler at 41F. No curry was on stove top or cooking at the time of inspection. PIC to keep curry in upright freezer, thaw in the upright cooler, and cook on stovetop to order. --- Observed time markings for boba. Discussed and completed TPHC form for boba during inspection. - K14: Food contact surfaces clean and sanitized. Measured chlorine sanitizer concentration in the 3-compartment sink at 100 ppm. Discussed washing, rinsing, and sanitizing procedures with PIC. Continue to address remaining violations as cited on the routine inspection report.

ROUTINE INSPECTION

A follow-up inspection to verify compliance of major violations will be conducted within 3 business days. The first follow-up inspection is free of charge. Subsequent follow-up inspections after the first follow-up shall be billed at $298/hour during normal business hours (Monday - Friday, 7:30 AM to 4:30 PM), and $645/hour during non-business hours, and upon inspector availability.

On the preparation counter, measured boba at 83F. Per PIC, boba was cooked 2 hours prior to temperature measurement. [CA] Potentially Hazardous Foods shall be kept at 41F or below or 135F or above.     Observed employee skipping the sanitizer step during active warewashing. [CA] Manual sanitization shall be accomplished in the final sanitizing rinse by contacting a chlorine solution of 100 PPM concentration for at least 30 seconds or by contacting a quaternary ammonium solution of 200 PPM concentration for at least 60 seconds. [COS] Employee manually set up the 3-compartment sink with sanitizer during the inspection. Measured chlorine at 100 ppm. Dishes were rewashed and sanitized.
