Observed the floor to have build up in several areas, especially in the corners and under equipment. [CA] Thoroughly clean the floors.
- K34: Warewash facilities: installed/maintained; test strips
Observed the quat sanitizer level at above 400ppm. [CA] Manual sanitization shall be accomplished in the final sanitizing rinse by contacting a chlorine solution of 100 PPM concentration for at least 30 seconds or by contacting a quaternary ammonium solution of 200 PPM concentration for at least 60 seconds. [COS] The dish washing sink sanitizer was corrected to 200ppm.

Not all of the employees working today had a food handler card. [CA] Each employee must have a food handler card.

Observed the light out above the corner hand sink and it is very dim in the area. [CA] Replace the light bulb that is out above the hand sink.

Observed a personal hand bag hanging on the apron rack. [CA] No person shall store clothing or personal effects in any area used for the storage and preparation of food or food contact surfaces.

Observed the bucket with wiping towels at approximately less than 100ppm quat. The towel container for the barista read approximately 0ppm. [CA] Wiping towels shall be stored in sanitizing solution of an approved concentration when not in use (100 ppm - chlorine, 200 ppm - quaternary ammonium).
