    Observed potentially hazardous foods that measured in the temperature danger zone located in the walk-in cooler and in the open food prep cold hold unit (see "measured observations" for exact values). Per PIC, the facility had a recent delivery in which the cooler door was propped open for a while. PHFs in the prep unit were in the unit since 10am. [CA] Ensure PHFs are properly cold held at 41F or below OR hot held at 135F or above. Repair, adjust or replace units if necessary. Minimize the amount of time cooler doors are propped open. Replace the missing lid on the food prep unit. [COS] PIC relocated PHFs that were made or delivered today

  • K40: Wiping cloths: properly used, stored

    Observed soiled wiping cloths on food prep surfaces. [CA] Wiping towels shall be stored in sanitizing solution of an approved concentration when not in use (100 ppm - chlorine, 200 ppm - quaternary ammonium).

  • K34: Warewash facilities: installed/maintained; test strips

    Facility did not have test strips. [CA] Facility shall have proper testing strips on site.
