    Observed heavy grime accumulation on the door of the walk-in cooler and walk-in freezer. [Corrective Action] Thoroughly clean and maintain clean. Wipe down the doors daily.

  • K07: Proper hot and cold holding temperatures

    1. Steam pork loaf and rice balls in the single door undercounter cooler in the kitchen was measured at 49 degrees Fahrenheit. [Corrective Action] Maintain Potentially Hazardous Foods at or below 41 degrees Fahrenheit. 2. Sliced pork in boxes were measured at 45 degrees Fahrenheit and were stored outside of refrigeration. Per operator, the boxes were just delivered at didn't have time to move into the walk-in cooler. [Corrective Action] Maintain Potentially Hazardous Foods at or below 41 degrees Fahrenheit. Immediately move Potententially Hazardous Foods into refrigeration when received from delivery.
