    Observed knives wedged between the preparation cooler and adjacent table across form the cooks line. [CA] Clean equipment and utensils shall be stored in a manner to prevent contamination of the food contact surface.

  • K07: Proper hot and cold holding temperatures

    Observed one cold top insert of spam over stacked in the prep cooler across from the cooks line measured at 47F at the top of the container and 41F at the bottom of the container. The PIC stated the spam was stocked from the walk in cooler approximately 3 hours prior. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [COS] The portions of the spam measuring above 41F were separated out to the walk in cooler.

  • K45: Floor, walls, ceilings: built,maintained, clean

    Observed an accumulation of grease on the floors around the legs and hard to reach areas below the cooking equipment and refrigeration at the cooks line. [CA] Walls and/or floors in food preparation area shall be kept clean.

    Observed cardboard lining the bottom shelves of the dry storage racks. [CA] Maintain equipment surfaces clean, durable, and nonabsorbent.

    Cardboard with tape was used as cover for bulk container of salt in back dry storage area. [CA] Surfaces of equipment shall be smooth, easily cleanable, nonabsorbent, durable, and maintained in good repair. Broken open top fridge cover for mac salad fridge across cookline. [CA] Secure/ repair open top fridge. Untreated wood and cardboard were use as liner for shelves. [CA] Discontinue the use of cardboard boxes to line shelves/flooring, use approved equipment made of materials that is easily cleanable, durable, smooth, and nonabsorbent.

  • K30: Food storage: food storage containers identified

    Food is stored on the floor in walk-in freezer. [CA] Food shall be stored at least 6 inches above the floor to prevent contamination.

  • K06: Adequate handwash facilities supplied, accessible

    Back hand wash sink near 3 compartment sink was blocked by pans on the floor. Emptied paper towel dispenser in the same hand wash sink. Another hand wash sink is located in the front near cookline. [CA] Handwashing facility shall be clean, unobstructed, and accessible at all times. Single-use sanitary towels shall be provided in dispensers; heated-air hand drying device may be substituted for single-use towels.

  • K33: Nonfood contact surfaces clean

    Debris built up on the floor under fryer. Grease built up in oil droplets on the hood. [CA] Clean and maintain.
