    Observed potentially hazardous food that measured in the temperature danger zone located in the food prep cold hold unit (sliced tomatoes 49F). Per staff, the tomatoes were recently sliced put into the unit about one hour prior. [CA] Ensure PHFs are properly cold held at 41F or below OR hot held at 135F or above. Discontinue putting sliced tomatoes directly into the food prep cold hold unit until they are chilled to 41F or below in the reach-in unit. Another option would be to time mark the tomatoes for 4 hours and discard them at the end of the 4 hour mark. [SA] PIC time-marked the tomatoes and will discard in 3 hours.
