Water at the front handwash sink sprays out sideways. [Corrective Action] Repair nozzle so that water sprays downward.
ROUTINE INSPECTION
Quaternary ammonium sanitizer concentration in the 3 compartment sink was measured at ZERO ppm. No active warewashing at the time of inspection. [Corrective Action] Maintain quaternary ammonium sanitizer concentration at 200 ppm.
ROUTINE INSPECTION
The thermo label placed on the sheet pan in the high temperature dishwasher did not turn black indicating surface temperature did not reach proper sanitizing temperature of 160 degrees Fahrenheit. [Corrective Action] Ensure surface temperature of utensils reach a minimum temperature of 160 degrees Fahrenheit.
