The walls, floors and surfaces of equipment have a build-up of grease and food debris. [CA] Nonfood-contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

The food preparation sink was obstructed from use by the storage of a counter top induction burner. [CA] The food prep sink shall be accessible and/or unobstructed at all times.
- K38: Adequate ventilation/lighting; designated areas, use
Observed four unventilated pieces of equipment (two electric infrared burners, one Turbo fan and one toaster oven). Observed the build-up of grease and materials on the walls behind the electric infrared burners. Equipment not in use at the time of inspection. [CA] Provide approved exhaust hood ventilation over all cooking equipment as required to effectively remove cooking odors, smoke, steam, grease, heat, and vapors. Limit unventilated cooking equipment to two pieces. A hood exemption statement from a mechanical engineer may be required.

Bulk condiment containers stored directly within the janitorial sink. [CA] Discontinue the storage of food within the janitorial sink. Store food in approved areas. Drinks stored directly under the three compartment sink. [CA] Food shall be stored at least 6 inches above the floor to prevent contamination.
