1. Food containers stored on the floor of the walk-in cooler. [CA] Food shall be stored at least 6 inches above the floor to prevent contamination. 2. Crate used to elevate food containers in walk-in cooler. [CA] Discontinue using crates to elevate food items from the floor, use approved shelving instead.
- K21: Hot and cold water available
Measured hot water between 112-114F. [CA] Hot water shall be supplied at a minimum temperature of at least 120°F measured from the faucet throughout facility except at handwash sinks measured at 100-108F.
