    At service line, measured fried tofu above 50F, tofu was held in the unit for more than 4 hours. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [COS] Employee discarded tofu in refuse bin.

  • K38: Adequate ventilation/lighting; designated areas, use

    Grease buildup on ventilation hood. [CA] Ventilation hood filters shall be maintained clean and good repair.

    At dry storage area, bags of peanuts and boxes of produce stored directly on the floor. [CA] Food shall be stored at least 6 inches above the floor to prevent contamination.

[COS] Employee was directed to add chlorine to the 3rd compartment. After set up chlorine was measured at 100ppm.

    At cookline, multiple food items measured between 50F and 80F (see measured observations), person in charge stated all dishes are kept under TPHC and explained that the timer would start when food is placed in the service line, not when removed from temperature control. All foods were cooked approximately 2 hours ago. [CA] When time only, rather than time and temperature is used as a public health control, PHFs shall be time marked to indicate when item is removed from temperature control, discarded if not consumed or served within 4 hours, and written procedures shall be readily available for review. [COS] PIC adjusted the time to discard PHFs within4 hours of removal from temperature control.

[CA]- Maintain raw shell eggs at 45F or below. [COS] - Eggs moved to another refrigerator.
