- K40: Wiping cloths: properly used, stored
Sanitizer bucket was measured at 200PPM of chlorine at the time of inspection. [CA] Wiping towels shall be stored in sanitizing solution of an approved concentration when not in use (100 ppm - chlorine, 200 ppm - quaternary ammonium). [COS] PIC diluted the solution with water; re-measured at 100PPM.
- K21: Hot and cold water available
Hot water was measured at 113*F at the time of inspection. [CA] Hot water shall be supplied at a minimum temperature of at least 120°F measured from the faucet throughout facility except at hand wash sinks (100*F).
- K35: Equipment, utensils: Approved, in good repair, adequate capacity
Broken plastic cover for flour at dough making area. Duct tape was used to fix the broken lid. [CA] Replace broken cover to smooth, easily cleanable, nonabsorbent material REPEAT VIOLATION. Failure to comply may result in enforcement action.

Heavy food debris noted around the kitchen area. [CA] Regularly clean around the kitchen area to prevent accumulation of debris.

Unable to provide food handler cards for employees at the time of inspection. [CA] Each food handler shall maintain a valid food handler card for the duration of his or her employment as food handler. A valid food handler card shall be provided within 30 days of after the date of hire. REPEAT VIOLATION. Failure to comply may result in enforcement action.

Missing label for the prepackaged cake, jello and flan in reach-in fridge at customer area. [CA] Food prepackaged in a food facility shall bear a label with the following: 1) common name of the food, 2) list of ingredients in descending order of predominance by weight, 3) quantity of contents, 4) name and place of business of the manufacturer, packer, or distributor. REPEAT VIOLATION. Failure to comply may result in enforcement action.
