    Per PIC, the dishwashing machine under the 3-compartment sink is out of order and has not been utilized in years. [CA] All equipment shall be fully operative and in good repair. If there are no plans to use the dishwasher in the near future, remove it from the facility.

    Pizza from New York Pizza (outside vendor) does not have time marking per TPHC procedures (time pizza was removed from oven by vendor). Per PIC, pizza was delivered around 10:40AM from Palo Alto (location about 20 mins away). Pizza was placed in warmers at 10:40AM. [CA] When time is used as a public health control (TPHC), PHFs shall be accurately time marked to indicate when item is removed from temperature control, discarded if not consumed or served within 4 hours, and written procedures shall be readily available for review. [COS] Pizza will be served until 12:40PM. Spoke w/ PIC regarding TPHC procedures and proper time marking.
