    Observed on today's Time as a Public Health Control (TPHC) time logs: - Temperatures were taken at 9:50am - "CA roll with chicken gyoza" and "Spam Musubi" temperatures were recorded as 80F at 9:50am. [CA] When using TPHC, foods must be immediately time-marked upon being removed from temperature control (i.e. when any ingredient is removed from active holding at 41F and below or 135F and above). [SA] All foods had already been served today. Discussed with PIC on site and with Charley's Noodle representative (Lisa) over the phone. Ensure different time stamps are recorded for different food items as necessary to properly document when the 4 hour time limit can begin.

Note: 1. Per PIC, facility receives prepackaged Potentially Hazardous Foods (PHFs) and non-PHF snacks from Charles Noodle and Grill which is located at 244 State St, Los Altos, CA 94022 daily. Food is delivered in the morning and stored securely inside the office/break room area until service. Food is kept inside upright warmers and portable coolers, and then transported outside for service on folding tables. Reviewed time/temperature receiving logs. 2. No violations were observed during the time of this inspection.

    Time log for Charlie's Lunch has cold food measured at 80F at 9:52AM. All other foods were time logged properly. After reviewing procedures and speaking with Lisa from Charlie's Lunch, time log for cold food should start when food leaves the refrigerator (including ingredients). Per Lisa, food was removed from refrigerator about 30 mins before temperature was taken at 9:20AM. [CA] When time is used as a public health control (TPHC), PHFs shall be accurately time marked to indicate when item is removed from temperature control, discarded if not consumed or served within 4 hours, and written procedures shall be readily available for review.
