    Observed accumulation of dust in the ventilation hood above the cook line and in the fan above the door entrance. [CA] Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

  • K38: Adequate ventilation/lighting; designated areas, use

    Observed four light bulbs above the cook line are non-operable. [CA] Repair light bulbs. In every room and area in which any food is prepared, manufactured, processed or prepackaged or in which equipment or utensils are cleaned, sufficient natural or artificial lighting shall be provided.

    In the center preparation area, observed the hot water knob at the handwash sink is non-operable. Per employee, the facility has already submitted a ticket for repairs. [CA] Handwashing facilities shall be equipped to provide minimum 100°F water under pressure for a minimum of 15 seconds.

    Facility lacks testing materials for high temperature dishwasher. [CA] Testing equipment and materials shall be provided to adequately measure the applicable sanitization method used during manual or mechanical warewashing.

    Facility lacks sanitizer testing materials for the high temperature dishwasher. [CA] Testing equipment and materials shall be provided to adequately measure the applicable sanitization method used during manual or mechanical warewashing.

  • K40: Wiping cloths: properly used, stored

    Measured the sanitizer concentration in wiping cloth buckets at 0 ppm. [CA] When not in use, wiping cloths shall be stored in an approved sanitizing concentration. [COS] Employee changed out sanitizer buckets.

  • K30: Food storage: food storage containers identified

    Observed multiple bulk bags of flour opened and uncovered throughout the food preparation area and storage. [CA] After opening, bulk ingredients shall be transferred to approved containers with tight-fitting lids.

  • K41: Plumbing approved, installed, in good repair; proper backflow devices

    Observed the walk-in cooler is draining into a floor sink that is near overflowing due to slow drainage. Per PIC, the floor sinks throughout the building are not adequately draining. A ticket has already been submitted for repair. [CA] Monitor the floor sink to ensure wastewater does not overflow. Repair plumbing fixtures and maintain in good condition.
