ROUTINE INSPECTION
Notes: - Onsite for routine inspection. - Facility SOPs for prepackaged food service were reviewed. - Facility was able to produce food transportations logs and TPHC written procedures. Observed the following: - Two overhead canopies covering foldable tables were set up in the hallway of the school. Tables were holding salads, fruit, and chips at ambient temperatures. All prepackaged. - An upright warming unit holding prepackaged PHFs (pizza, burritos, etc). - Prepackaged servings of salsa and sour cream held at ambient temperatures. - A shed holding non PHF prepackaged foods was observed next to the unpermitted MFF. Discussed with Kyle about operating their prepackaged food service out of the shed or possibly a classroom. The SOP provided does not delineate where food service was to occur. Inspector to follow up with school about operating location.

Time logs were not available for food items. [CA] When time only, rather than time and temperature is used as a public health control, PHFs shall be time marked to indicate when item is removed from temperature control, discarded if not consumed or served within 4 hours, and written procedures shall be readily available for review. [SA] Reviewed the food transportation log and allowed for TPHC to begin when items were delivered.

Facility was operating their prepackaged food service under an overhead canopy. [CA] Food or food related equipment shall be stored in an approved fully enclosed food facility. Ensure to operate the prepackaged operation in an enclosed location.
