- K39: Thermometers provided, accurate
Unable to provide a food prober thermometer at the time of inspection. [CA] An accurate easily readable metal probe thermometer (accurate to +/- 2°F) that is designed to measure the temperature of thin masses shall be provided and readily available to accurately measure the temperatures of potentially hazardous foods.
- K07: Proper hot and cold holding temperatures
PHFs within the reach in at the back of the facility was measured at 46*F at the time of inspection. [CA] PHFs shall be held at 41°F or below or at 135°F or above. Submit work order to specialist for unit being repaired properly. [SA] All product was moved to the walk in at the time of inspection. REPEAT VIOLATION. Failure to comply may result in enforcement action.
- K21: Hot and cold water available
Hot water within the mop sink was measured at 113*F at the time of inspection. [CA] Hot water shall be supplied at a minimum temperature of at least 120°F measured from the faucet throughout facility except at hand wash sinks (100*F). Adjust water heater.
