Menu review showed that egg cream is added to the menu. Discussed the process with manager

Potentially hazardous food, boba, is subject to time rather than temperature but was not time-marked. [CA] Potentially hazardous foods that is subject to time rather than temperature shall be properly time-marked with the start/end of a 4 hour period where it shall be discarded if not used. [COS] Employee time-marked the boba.
- K07: Proper hot and cold holding temperatures
Egg cream and milk foam inside the food prep unit is measured at 44-45F. Creamer inside the upright reach-in cooler is measured at 43F. [CA] Potentially hazardous foods when cold holding shall be held at or below 41F.
- K41: Plumbing approved, installed, in good repair; proper backflow devices
1) Equipment drain lines (water filter, ice machine) extends into the floor sink that is located by the food prep sink. [CA] Provide a minimum of a 1 inch air gap between the end of equipment drain lines and the rim of the floor sink to protect equipment from backflow contamination. 2) Handle for hot water for the dump sink located behind the front counter is in disrepair. [CA] Repair faucet handle and maintain in good repair.

Accumulation of debris and mold in the floor sink located under the front counter and the floor sink next to the food prep sink. [CA] Frequently clean nonfood contact surfaces to prevent the accumulation of debris.
