Notes: - Facility receives breakfast items from Bijan Bakery. Ensure to receive foods either hot or cold. If items are under Time as a Public Health Control from the facility ensure to follow the original procedures, ie discard within 4 hours of removal from temperature control.

- K09: Proper cooling methods
Facility had multiple containers of breakfast items (ham and cheese croissants, burritos, etc) cooling with tight fitting lids. Items measured between 50-66°F around 11:30 am. Per PIC of where the food came from, the items came out of the facility around 2.5 -3 hours prior. [CA] When cooling PHF's, food may be left uncovered or loosely covered to allow rapid cooling. [COS] Items were uncovered to facilitate proper cooling. Discussed receiving temperatures of food with PIC.
- K41: Plumbing approved, installed, in good repair; proper backflow devices
The mop sink faucet is missing a backflow prevention device. [CA] The potable water supply shall be protected with a backflow or back siphonage protection device.
- K21: Hot and cold water available
Water at the mop sink and the three compartment sink measured at a maximum of 110°F. [CA] Hot water shall be supplied at a minimum temperature of at least 120°F measured from the faucet throughout facility except at handwash sinks.
