    There was a very low sanitizer concentration on the manual three-compartment ware washing sink. [CA] Whenever sanitizing of utensils/equipment is conducted, the sanitizer concentration maintain in the sanitizing compartment of the manual warewashing sink must be maintained at 200 ppm quaternary ammonia or 100 ppm chlorine, unless otherwise specified by manufacturer of the chemical.

    A couple of wet/soiled wiping cloths were stored on the counters. [CA] Wet/soiled wiping cloths must be stored in a bucket that has standard sanitizer concentration in between use which is 200 ppm quaternary ammonia or 100 ppm chlorine (bleach). Ther48 e was very low sanitizer concentration on one of the sanitizer buckets. [CA] Maintain the sanitizer concentration on the sanitizer buckets at 200 ppm quaternary ammonia. 100 ppm chlorine (bleach), 272 ppm -700 ppm lactic acid levels.

    At the only kitchen handsink, observed box of cabbage, a fan, and other items stored in front of the sink, partially obstructing it. Observed a yellow chemical spray bottle was stored inside, and a wiping cloth stored hanging off the edge of the handsink. [CA] Keep handsink unobstructed at all times. Do not store items inside the handsink. Handsinks must be acessible and clear to make handwashing not only possible, but likely.

    Observed accumulation of debris on floor sink finishes, especially the floor sink located under the front upright freezer. [CA] Keep floors/surfaces clean.

    1) In an upright 2-door freezer: observed raw meat stored above ready-to-eat foods (fries). 2) On the dry storage shelf: observed some prepackaged foods were opened and not properly re-sealed/covered (carton of powdered mashed potatoes, container of granulated onion). [CA] Store raw meats below ready-to-eat foods to prevent contamination. Keep foods sealed to prevent contamination.

    In the warewashing area, on a low shelf left of the 3-compartment sink: observed bottles of household cockroach-killing powder. [CA] Only those pesticides that are necessary and specifically approved for use in a food facility may be used (in accordance with the manufacturer's instructions). Remove pesticide from facility and only utilize professional pest control services.

    1) Observed employee's phone stored on prep surface of prep unit. [CA] Do not store personal items on food prep surfaces. 2) Observed mop stored with mop head on floor. [CA] After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies.

FOLLOW-UP INSPECTION

This was a follow-up to the routine inspection conducted on 10/1/24. Observed the major violations from the previous inspection were corrected as follows: - Observed the paper towel dispenser at the kitchen handwash sink was stocked. - No evidence of droppings/vermin was observed in the facility. Placard changed from yellow to green.

A follow up inspection will be conducted tomorrow, 10/2/24, to assess compliance regarding evidence of vermin, food contact surface sanitation, and handwash facilities. The first follow-up is free of charge. Any additional follow-up inspection(s) shall each be billed $298/hr during business hours. Failure to comply may result in enforcement action. Please call Mindy Nguyen at (408) 918-3490 if there are any changes or updates. Continue cleaning and sanitizing facility, especially the water heater room.
