Food handler training not provided during inspection. [CA]: All employees that handle open food or food contact surfaces shall obtain valid Food Handler Cards within 30 days of employment. [COS]: PIC adjusted the thermostat and hot water was provided (120F at 3 comp sink and prep sink; 100F at hand sink) by the end of inspection.

    *REPEAT VIOLATION* Several open bags of dry food at the dry storage area next to cook line. [CA]: Ensure all open bags of dry food are immediately transferred to food grade containers or stored in food grade containers and covered with a fitted lid.

    Dish machine was dispensing 0 ppm of Chlorine sanitizer. Chlorine bottle observed empty. No active ware-washing at the time of inspection. [CA]: Dish machine shall be able to dispense 50 ppm of Chlorine sanitizer at all times. [COS]: PIC provided a new Chlorine bottle and dish machine was observed dispensing at least 50 ppm of Chlorine by the end of inspection.

ROUTINE INSPECTION

Per PIC, the kitchen is only open when there are events, boarding meetings, etc. There is no set schedule of operation. Note: PIC was unable to sign because she went on an one hour break during report writing. No other PIC's were available on site. Specialist discussed inspection findings with PIC before she left. Copy of inspection report left at PIC's office.
