    Measured the ambient temperature of the preparation refrigerator at 48 f to 54 F. [CA] Refrigeration must be capable of maintaining PHFs at 41°F or below. [COS] Thermostat to the unit decreased. Temperature remeasured at 41 F or below.

    Measured custard at 48 F to 54 F and red bean at 49 F within the front preparation refrigerator. Measured boba pearls at 73 F stored on the drink preparation counter. PIC stated the boba was removed from cooking 1.5 hours prior. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [COS] Custard and red beans voluntarily discarded. Boba pearls time marked with a start and discard time. Facility intends on utilizing TPHC for boba going forward. Fill out procedures and return to inspector for review and approval.

Discussed with PIC proper use of TPHC and frequent cleaning of the ice machine. Facility did not receive last year's permit after payment was submitted.
