    Lacking mop rack at mop sink. Observed mop sticked stored directly in mop sink and other mop stick/device on floor to right of mop sink. [CA] Install mop rack. After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies.

    1. Found hot water valve off at the hand wash station in restroom. [CA] Ensure cold/hot water is provided at all times. [COS] Operator turned on hot water valve, observed hot water flowing. 2. Found water knob for hand wash station in restroom unable to turn off easily. Water knob is not connected properly to allow water to turn off/on easily. *Facility is hereby given a 48 hour notice to repair water knob to be easily operational.* Note: Hand wash station in prep/front service area has warm water greater than 100F and hot water greater than 120F at warewash sink.

    Inside the hot holding unit: measured internal temperature of meatballs to be 118 - 125F. PIC stated meatballs had been reheated and held since 2:30pm today (less than 30 minutes prior). [CA] Keep potentially hazardous foods at 135F and above or 41F and below. [COS] Meatballs were immediately reheated in the microwave.
