    Pastries with heat treated spinach were found ot be stored at ambient temperatures. Per PIC, they were delivered at around 6:30 am. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [SA] Discussed with Marissa use of TPHC to serve the pastries within 4 hours of being held out of temperature control. Marissa agreed to discard the pastries at 10:30 am. Items were discarded during inspection.

    Various types of milks were found measuring above 50F and out of temperature control on the coffee bar counter. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [COS] Ice baths were prepared for the milks to cool and hold at 41F or below.

  • K45: Floor, walls, ceilings: built,maintained, clean

    There is exposed electrical wiring coming from a hole in the wall above the undercounter cooler across the upright cooler. [CA] Repair holes in structure and maintain in good repair to prevent pest harborage.

    1. A food safety certificate was not available upon request. [CA] Food facilities that prepare, handle, or serve non-prepackaged potentially hazard foods shall have a valid Food Safety Certificate available for review at all times. 2. Food handler cards for staff were unavailable upon request. [CA] Each food handler shall maintain a valid food handler card for the duration of his or her employment as food handler. A valid food handler card shall be provided within 30 days of after the date of hire.
