At the MK 3 compartment warewashing sink, observed evidence of warewashing (wet jars and tongs). Sink lacks sanitizer, test strips and sink stoppers. [CA] Testing equipment and materials shall be provided to adequately measure the applicable sanitization method used during manual or mechanical warewashing. Plugs/stoppers shall be available to fill up the warewashing sink. Provide adequate equipment to perform proper warewashing at the MK 3 compartment sink or submit an SOP to this department for eliminating the use of the MK 3 comp sink and performing all warewashing at the nearest cafe.
