    Per PIC, Time as a Public Health Control (TPHC) is used for the cooked chicken (5 minute time limit) and fries (15 minute time limit). However, the timers were not turned on for these items. [CA] When using TPHC, foods must be IMMEDIATELY time-marked / timer turned on at the start of the time window. [COS] Timers were turned on. _______ Note: company's written training documentation states that the "hold time" is 5 / 15 minutes for the chicken and fries. Ensure staff is trained to immediately time-mark foods and to discard food immediately at end of time limit. Provided DEH's TPHC written procedures form for reference. If future TPHC violations are observed in the future, facility may be required to submit written SOPs that explicitly mention the timers and discard times. In general, repeat TPHC violations may result in revocation of the right to use TPHC.
