- K14: Food contact surfaces clean, sanitized
3-comp sink measured to have 100ppm quat ammonia. No dishwashing at 3-comp observed at time of inspection. [CA] Manual sanitization shall be accomplished in the final sanitizing rinse by contacting a chlorine solution of 100 PPM concentration for at least 30 seconds or by contacting a quaternary ammonium solution of 200 PPM concentration for at least 60 seconds.
- K09: Proper cooling methods
Observed curries in large deep plastic containers inside walk in measuring 86F. Per label container was made about 1 hour 40 minutes prior. [CA] Cool PHFs using small portions or shallow pans. Use heat conductive materials like metal and stir frequently to cool evenly. [COS] Curry was reheated to 165F. Curry will be placed in shall metal chaffing dishes and placed onto speed rack in walk in cool rapidly
