    In the back of house area, at the only hand wash station, there were no paper towels in the dispenser. [CA] Single-use sanitary towels shall be provided in dispensers; heated-air hand drying device may be substituted for single-use towels. [COS] Staff stocked the dispenser with paper towels at time of the inspection.

    The quaternary ammonia in the three compartment sink was measured at 0 ppm. [CA] Manual sanitization shall be accomplished in the final sanitizing rinse by contacting a chlorine solution of 100 PPM concentration for at least 30 seconds or by contacting a quaternary ammonium solution of 200 PPM concentration for at least 60 seconds. [COS] Staff adjusted the tube going into the sanitizer bottle and dispenser started working properly. Sanitizer measured at 200 ppm.

  • K34: Warewash facilities: installed/maintained; test strips

    Facility lacks the testing materials for their choice of sanitizer, quarternary ammonia. Facility provided pH strips when asked for testing equipment. [CA] Testing equipment and materials shall be provided to adequately measure the applicable sanitization method used during manual or mechanical warewashing.
