Observed numerous cylinder cannisters maintained below the left drain board of the three-compartment sink unchained. [CA] All pressurized cylinders shall be securely fastened to a rigid structure.

Undercounter dish machine failed to dispense any measurable sanitizer after multiple cycles. At time of inspection, the dish machine was used to wash non-food contact equipment. Manager stated that if kitchen is busy, dish machine at the bar would be used to wash food contact utensils. [CA] Maintain chlorine in mechanical warewash machine at 50 PPM, or per manufacturer specifications.
